Fire And Ice Pickles

8-9 medium pickling cucumbers
1 medium white onion
2 cup vinegar
1 1/2 cups sugar
2 cups filtered water
1 teaspoon coarse ground black pepper
1 package crushed red pepper flakes from your favorite Pizza joint
1/2 teaspoon celery seeds
2 teaspoon salt
1/2 teaspoon cayenne

1/2 teaspoon ground tumeric
1/2 teaspoon mustard seed
1 teaspoon pickling spice
(which is a combo of cinnamin stick, mustard seed, cloves, pepper corns, chilies)

Slice cucumbers and onion on a French mandolin with the grate or waffle edge 1/8 inch thick.
Place in bowl.
Mix vinegar, sugar, water, black pepper, red pepper flakes, celery seeds, salt, other spices and cayenne in a bowl, making sure the sugar is dissolved.

Pour over cucumbers and onion.
Separate onion and toss cucumbers to thoroughly coat with the marinade.

Chill in refrigerator overnight.
To serve, drain and reserve marinade, which can be used again.
Yield: 4 to 6 servings

  1. They turned out great! We even want to turn up the heat! Because I have an obcession with hot and spicy food, these are now my favorite.

    The next thing I am going to do is try to process them. Wish me well!
